The festival officially begins with the "palo jabón," a greasy pole climbing competition where participants try to reach the top of the pole to claim a ham that hangs at the top. Once the ham is retrieved, the signal for the tomato fight to begin is given, and trucks filled with tons of ripe tomatoes arrive in the town square.

As soon as the first tomato is thrown, chaos ensues as participants start pelting each other with squashed tomatoes, covering the streets and buildings in a sea of red pulp. The atmosphere is filled with laughter, excitement, and a sense of camaraderie as everyone joins in the messy fun.
